Prosciutto di Norcia PGI is a raw ham obtained from heavy national pork legs, aged 18 months at 1000 meters above sea level, on the tops of the Sibillini Mountains of Norcia. The seasoning finds here the ideal climate to give thickness and sweetness to this ham with the characteristic "cello" shape and the classic triangular cut of the rind. It has a delicate perfume and its slice is pinkish-red in color.
Deboned Aged Venison Ham is a product obtained from rump, knife-worked, degreased and trimmed, dry salted with an aromatic tanning based on natural spices and spices. Then the meat is left to marinate in the tank for 30 days, then hung and seasoned for more than 5 months. Vacuum packed, it retains its fragrance and does not undergo weight loss.
